What is the best lasagna recipe?

I've never made lasagna before and would like to find a recipe which does not taste just like pasta with tomato sauce.What is the best lasagna recipe?
This recipe is awesome! About the only thing I do differently is fill up a 2-quart pitcher w/ really hot tap water and soften my noodles in that, rather than boiling them. They will finish cooking while you bake the lasagna, but are soft enough to fit into corners of your pan.








LASSGNA





Salt


1 package lasagna noodles


1 1/2 pounds lean ground beef


1 medium yellow onion, finely chopped


1 teaspoon minced garlic


1 tablespoon dried oregano


2 cans tomato soup


2 tablespoons apple cider vinegar


Nonstick cooking spray


2 cups cottage cheese (small curd)


2 cups shredded mozzarella cheese





Bring a large pot of water to a boil and add salt. Boil noodles according to package directions. Drain and arrange in casserole (see below).


While noodles are boiling, brown beef in a large frying pan over medium-high heat, adding chopped onion, garlic and oregano to meat as it cooks. When meat has browned, drain off fat and then add tomato soup and apple cider vinegar. Simmer for 20 minutes.


Preheat oven for 350 degrees F.


Spray a medium casserole dish with a nonstick cooking spray. Lay noodles lengthwise across bottom of casserole dish. Spread a layer of cottage cheese over top of noodles. Add a layer of meat mixture, then cover with mozzarella cheese and repeat for a total of 3 layers. Finish with a layer of cheese and bake for 30 minutes or until bubbling. Remove from heat and let stand for 5 minutes before cutting and serving.

The meat sauce is essentially a bolognase. What hasn't been mentioned so far is cooking time. Bolognase should be cooked for around 2-3 hours, this makes the meat really tender. It is not unknown for Italian cooks to take four hours cooking their bolognase.





Another tip: when my minced beef is frying I put in a glass of wine, then cook it off, then put in a glass of milk and cook that off. As with soup, milk can really help to tie the ingredients together.
This is a really good one.

2 tb Oil


2 ea Slices chopped bacon


2 ea Cloves crushed garlic


1 ea Chopped onion


1 1/2 lb Lean ground beef


1/2 lb Chopped salami


1/2 ts Sweet basil


1 tb Chopped parsley


2 ea 5 1/2 oz cn tomato paste


2 c Canned tomatoes


1/2 lb Mushrooms


1/2 c Water


2 ts Salt


1/4 ts Pepper


1/2 lb Mozzarella cheese


2 ea Beaten eggs


1/2 c Grated Parmesan cheese


1/2 lb Cooked lasagna noodles


8 oz Cottage cheese








Instructions





Saute bacon, crushed garlic, and onion in hot oil for 5 min. Remove the garlic. Add ground beef, salami, basil, and parsley. Brown well. Add tomato paste, tomatoes, mushrooms, and water. Simmer uncovered for 1 hour or until very thick. Season to taste with salt and pepper. Preheat oven to 375F. Butter a 12x9 inch casserole or lasagna dish. Grate mozzarella. Combine cottage cheese, egg and Parmesan cheese. Pour a layer of tomato sauce in the bottom of dish. Cover with a layer of noodles and a layer of the cheese /egg mixture, sprinkle with mozzarella. Repeat, ending with sauce and a layer of mozzarella. Bake for 30 min. Note: The flavor improves when lasagna is prepared a day in advance and refrigerated until time for baking.
