Choose your faveorite marinade.


Rinse chicken wings under running cold water then pat dry with paper towels and set aside.


In a nonmetallic bowl large enough to hold chicken wings in a single layer marinade and turn wings to coat thoroughly. Cover with aluminum foil or plastic wrap and marinate overnight in the refrigerator.


Remove wings from marinade and reserve marinade for basting.





Grilled chicken wings on a rack about 6 inches above medium hot coals for 35-40 minutes. Turn wings often and brush with remaining marinade until wings are browned.

Marinate them in the fridge overnight of for and couple of days in your favorite marinade (salad dressings, bbq sauce, yoshida's teriyaki sauce) but place them in a vaccum sealer bag and vaccum seal them and the marinade together. This infuses the marinade into them. Don't have a vaccum sealer? Use a ziplock bag and let soak for 3 days in the marinade.





Cook on medium heat on the grill if gas powered or bank the coals to each side and use the middle of the grill for charcoal.


Baste them with NEW marinade as they cook. Do not use the marinade that the chicken soaked in due to possiblities of foodborne illness such as Salmonella.
marinade for a few hours before cooking, I prefer Zesty Italian dressing somehow it has the best combination of vinigar and oil, and the chicken just soaks it up.


Get the coals ready and start laying them down. three minutes per side over hot coals, flipping twice then close the lid and let each side go for eight to ten minutes each. Thats how I do it and never had a complaint...

I like to get chicken wings and wash them really well, then squeeze plenty of fresh lemon juice on them and place them in a bowl over night with some spicy brown mustard(it's not really spicy) but it will flavor it really good and give it a golden color and crunch!
I put the wings in barbecue baskets, they close the wings inside securely and they have a nice long handle to turn as they cook. I brush them after they start cooking with a barbecue mop, if you do it too soon they will burn so I wait until I make the first turn.
