Best ever recipe for oatmeal cookies?

what's your favourite recipe, raisins, chocolate chips, nice soft tasty cookies? Hafta make some for the preschool party, but don't have any decent recipes!

These are my favorite and whenever I make them they go very quickly at my house and with my friends - they are soft and chewy.








COCONUT OATMEAL COOKIES





1 cup sugar


1 cup brown sugar


2 cups flour


2 sticks butter - softened


2 eggs - room temperature


2 cups oatmeal


1 cup coconut - flaked





Combine all ingredients and drop by spoonful on cookie sheet and bake 10 minutes at 325 degrees. Do not brown. Remove from oven and cool. This is a very chewy cookie.





COCONUT OATMEAL COOKIES





1 cup butter - softened


1 cup brown sugar


1 cup white sugar


2 eggs - room temperature


1 tsp. soda


1 tsp. baking powder


1 cup flaked coconut


2 cups oatmeal (quick cooking)


2 cups all-purpose flour


1 tsp. vanilla


1/2 cup chocolate chips - OPTIONAL


1/2 cup crushed nuts - OPTIONAL





Mix butter, brown sugar, white sugar and eggs. Then add rest of the ingredients. Mix well. Roll into balls and press down. Bake at 350 degrees for 10 to 12 minutes. Variations: For special Christmas cookies, omit chocolate chip and add 1 cup cut up gumdrops. Decorate top with 1/2 of a gumdrop in middle of each cookie. I like regular oatmeal cookies....used as homeade oatmeal cream pies! YUM!





Just make the cookies as you normall would and then sandwich them with some filling made from powdered sugar, butter and a few drops of cream.
These are really good. I have made them before. They are number 4 on the top 20 on allrecipes.com





Beth's Spicy Oatmeal Raisin Cookies





INGREDIENTS


1/2 cup butter, softened


1/2 cup butter flavored shortening


1 cup packed light brown sugar


1/2 cup white sugar


2 eggs


1 teaspoon vanilla extract


1 1/2 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon ground cinnamon


1/2 teaspoon ground cloves


1/2 teaspoon salt


3 cups rolled oats


1 cup raisins





DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.


Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!
Yummy Apple Oatmeal Cookies - that way you get the kids to eat some fruit too! Healthy nutritious and yummy!


Maybe leave out the nuts just incase any of the little ones have a nut allergy!





INGREDIENTS





* 1 cup all-purpose flour


* 1 teaspoon baking powder


* 1 teaspoon ground cinnamon


* 1/2 teaspoon salt


* 1/2 teaspoon ground nutmeg


* 1/2 cup shortening


* 3/4 cup white sugar


* 2 eggs


* 1 cup rolled oats


* 1 cup diced apple without peel


* 1 cup chopped walnuts





1. Preheat oven to 350 degrees F (175 degrees C).


2. In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.


3. Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.
Banana Oatmeal Cookies





1 cup all purpose flour


1/2 tsp baking powder


1/2 tsp baking soda


1/4 tsp salt


2 tbsp butter, very soft


1/2 cup sugar


1/2 cup brown sugar


1/4 cup mashed banana (1 small/medium)


1 egg


1 tsp vanilla extract


1 1/2 cups oats


1 cup chocolate chips








Preheat oven to 350F and line a baking sheet with parchment paper.


In a small bowl, whisk together flour, baking powder, baking sodaand salt.


In a large bowl, cream together the butter and the sugars. Beat in egg and banana, followed by the vanilla extract. Gradually, on low speed or by hand, add in the flour mixture. Stir in the oats (either whole rolled oats or ';quick cooking';) and chocolate chips.


Drop dough by tablespoonfuls onto prepared baking sheet.


Bake for 11-14 minutes at 350F, until set and lightly browned.


Let cookies cool for about 5 minutes on the pan before transfering them to a wire rack to cool completely.


Makes 2 dozen cookies.
