Give me your best quick and easy healthy recipes!?

We can probably all benefit from some recipe sharing around here! I need some help in the kitchen! My daughter also eats dairy free making it a tad trickier so include your non cheesy meals. Let me know what you go and post it here. ;) Thx!Give me your best quick and easy healthy recipes!?
I too make quite a lot of dairy free meals, as I too don't eat dairy products! I use pure, a brand of butter which is dairy free. I have some good recipes of my own here...





JACKET POTATO AND MEDITERRANIAN VEGTABLES


Number of servings: 2


Preparation time: 5 minutes


Cooking time: 25 minutes





INGREDIENTS





50g/1戮oz Pure


2 baked jacket potatoes


1 onion, chopped


1 medium courgette, cut into 10mm/陆inch dice


1 red pepper, cut into 10mm/陆inch dice


400g can of chopped tomatoes


1tsp dried herbs


Ground white pepper or paprika to season





METHOD





1. Melt Pure in a pan and add onion, courgette, red pepper, and the herbs. Fry gently for 5 minutes.





2. Add chopped tomatoes bring to the boil then reduce heat and simmer for 20 minutes. Season to taste with pepper.





3. Split the baked potatoes, add a knob of Pure and top with the vegetable mixture.





CRISPY CHICKEN AND SWEET POTATO STICKS





Number of servings: 2


Preparation time: 10 minutes


Cooking time: 20 minutes





INGREDIENTS





100g/3陆oz Pure, melted


2 chicken breasts cut into 12 strips


2 medium sweet potatoes, scrubbed and cut into 12 wedges


50g/1戮oz plain flour


1 large egg, beaten


100g/3陆oz cornflakes, crushed with a rolling pin


salt and pepper











METHOD





1. Preheat oven 190掳C/375掳F/gas mark 5. Grease a baking sheet with half of the melted Pure and place in a preheated oven for 5 minutes.





2. Season the flour with the salt and pepper. Dust the chicken strips and the sweet potato wedges with the flour and dip them in the beaten egg then roll in the cornflakes. Place the coated chicken and potato wedges onto the hot baking sheet, drizzle with the rest of the melted Pure and bake for 20 minutes or until cooked.





3. Serve with tomato sauce.





FAB FISH PIE





Number of servings: 4


Preparation time: 30 minutes


Cooking time: 40 minutes








INGREDIENTS








PASTRY


100g/3陆oz Pure


175g/6oz cold mashed potato


75g/2戮oz rice flour


50g/1戮oz cornflour





FILLING


50g/1戮oz Pure


50g/1戮oz rice flour


425ml/戮 pint fish stock or vegetable stock (gluten free)


1tbsp parsley, finely chopped


450g/1lb cooked, smoked haddock fillet, cut into chunks


100g/3陆oz prawns cooked and peeled





METHOD





1. Pre-heat the oven to 180掳C/350掳C/gas mark 4. Grease a 1陆l/2戮pint ovenproof dish with Pure.





2. To make the pastry, rub the Pure into the flour to make breadcrumbs. Add the potato and mix well. Wrap in cling film and chill for 30 minutes.





3. To make the filling; melt Pure in a saucepan and stir in the flour, to make a paste. Gradually add the stock, stirring continuously and bring to the boil. Add the chopped parsley.





4. Place the haddock and prawns in an ovenproof dish and pour over the sauce. Roll out the pastry and cover the pie. Bake in the oven for 40 minutes.





a little tip: For ease of handling, the pastry can be rolled out between two pieces of cling film.





WINTER VEGTABLE BAKE





Number of servings: 2


Preparation time: 10 minutes


Cooking time: 35-40 minutes








INGREDIENTS





25g/1oz Pure


25g/1oz plain or gluten free flour


500g/1lb 2oz vegetables such as carrots, broccoli, cauliflower, parsnips, peeled and chopped and par cooked.


300ml/陆pint vegetable stock


2 tbs freshly chopped herbs (parsley, sage thyme, tarragon)


Salt and ground white pepper to season





METHOD





1. Preheat oven to 180掳C/350掳F/gas mark 4.





2. Put the partially cooked vegetable mixture in an oven proof dish.





3. Melt 25g/1oz Pure in a saucepan and stir in 25g/1oz flour. Gradually stir in the vegetable stock and continue until sauce is smooth.





4. Bring to the boil, reduce heat and cook until the sauce thickens. Add in chopped herbs and season to taste. Pour sauce over the vegetables.





5. Bake in the oven for 35-45 minutes.

take 1 carrot


1tamato deseeded


1 onion


1/2 cup corn


1/4 cup peas


1/2 capsicum


cut all of them in cubes. sorte the capsicum 4 2 mins in 3-5drops oil n boil the corn n peas together in 3tbsp water


mix all this 2gether.add salt n pepper n lil dried oregano.... u can also grate cheese over this tasty n very healthy...
