Hi! I have a microwave chicken breasts florentine recipe that you might like. You can serve it over rice, pasta, or just eat it by itself. Here's the recipe:











Serves: 6


Ingredients





* 2 pound boneless chicken breasts


* 1/2 cup flour


* 2 large eggs, beaten


* 2/3 cup seasoned dry bread crumbs


* 1 clove garlic, chopped


* 1/4 cup dry white wine


* 1 envelope golden onion soup mix


* 1 1/2 cup water


* 2 tablespoon parsley, finely chopped


* 1/8 tablespoon pepper





Instructions





1. Dip chicken in flour, then eggs, then bread crumbs as above.





2. In 3-quart casserole, heat chicken, uncovered, on high (full power) 4 minutes, rearranging chicken once.





3. Stir in garlic, then golden onion recipe soup mix, thoroughly blended with water and wine.





4. Heat uncovered on high 5 minutes or until boiling, stirring once.





5. Decrease heat to medium (50% of full power) and heat uncovered, stirring occasionally, 7 minutes or until chicken is done and sauce is slightly thickened.





6. Stir in parsley and pepper.





7. Let stand covered 5 minutes. Serve over hot cooked rice or white rice and/or hot cooked spinach.

Ginger Chicken (Microwave Method)

3 pounds frying chicken -- (3 to 4 lb)


1 teaspoon salt


1/3 cup soy sauce


1/2 teaspoon sugar


1 1/2 tablespoons fresh ginger root -- minced


2 tablespoons sherry


1 freezer bag -- gallon





Loosen the skin around the chicken by sliding a chopstick between the meat and the skin, poking into thighs, legs, from the back and over the breast. Wash and dry chicken, and salt the cavity and outside. Mix soy sauce, sugar, ginger and sherry. Pour inside the chicken skin, turning the chicken so the mix penetrates all around the chicken. To freeze: wrap chicken tightly in plastic wrap. Place whole chicken inside gallon ziploc freezer bag. Freeze. To prepare: thaw wrapped chicken before cooking. Place chicken breast down in microwave cooking dish and cover with Stretch-Tite or plastic wrap. Cook 12 minutes on High with breast down; turn chicken breast up, cover with Stretch-Tite and cook 13 minutes more on High. Cut up on platter for serving, and top with the juices. Cornflake crumbs

Pound out chicken breasts between two sheets of wax paper until thinned. Put a tbs of cheese in center each chicken breast %26amp; roll up %26amp; secure with a toothpick. Roll the chicken breast in butter, then in bread crumbs. Place in a microwave dish %26amp; cook on high for 6 to 9 min.

2 Boneless whole chicken


Breasts, split in half


Skin removed (8 to 10 oz ea)


1 c Taquila marinade -- divided


(recipe follows)


1 med Green pepper


Sliced into thin rings


1 med Onion, thinly sliced


Rings separated


4 Flour tortillas (8 inch)





In a large food-storage bag, combine chicken and 3/4 cup taquila marinade.


Chill remaining marinade. Secure bag. Chill at least 2 hours, turning bag over


once or twice. Prepare grill for low direct heat. In 8-inch square baking dish,


arrange chicken breast with meaty portions toward outside edges. Pour marinade


over chicken. Cover with wax paper. Microwave at High for 4 to 6 minutes, or


until exterior of meat is no longer pink, rearranging chicken breasts once.


Place on cooking grid. Grill, uncovered, for 8 to 12 minutes, or until chicken


is no longer pink and juices run clear, turning once. Wrap grilled chicken in


foil to keep warm. Set aside.


In a 1-quart casserole, combine remaining 1/4 c marinade, pepper and onion.


Cover. Microwave at High for 5 to 7 minutes, or until pepper and onion are


tender crisp, stirring once or twice. Set aside. Place tortillas between 2


dampened paper towels. Microwave at High for 45 seconds to 1 minute or until


tortillas are warm to the touch. Cut each chicken breast half into thin strips.


Place strips in warm tortilla. Top with 1/4 of pepper and onion mixture. Fold up from bottom. Fold in sides and secure with wooden pick, leaving top open.Top with salsa, sour cream, and guacamole, if desired.

Microwave Chicken Breasts Parmesan

















1 can (8 oz. tomato sauce





1 teaspoon Italian seasoning





1/4 teaspoon garlic salt





1/3 cup Italian style bread crumbs





1/4 cup Parmesan cheese, grated





1 teaspoon dried parsley flakes





2 chicken breasts, boned skinned, and halved





1 egg, beaten





1/2 cup Mozzarella cheese, shredded





Parmesan cheese, grated

















Directions





In a 2-cup measure, mix tomato sauce, Italian seasoning, and garlic salt. Cover with waxed paper and microwave on high 2 minutes; stir. Microwave on medium 5 minutes, stirring once; set sauce aside. Mix bread crumbs, 1/4 cup Parmesan cheese, and parsley flakes. Dip chicken breasts in beaten egg; then, dip in crumb mixture. Place in rectangular 12X8-inch baking dish or 10-inch square casserole. Cover with waxed paper; microwave at medium-high until chicken is tender (9 to 14 minutes), rearranging after half the cooking time. Pour sauce over chicken. Sprinkle mozzarella and Parmesan cheese over chicken breasts; microwave at medium-high for 2 to 5 minutes
