SPINACH ROLL-UPS





1 (10 ounce) package frozen chopped spinach, thawed and drained


1 cup mayonnaise


1 (8 ounce) container sour cream


1 cup chopped green onions


1 (1 ounce) envelope Ranch-style dressing mix


1 (3 ounce) jar bacon bits


9 (10-inch) flour tortillas





Stir together first 6 ingredients: spread evenly on tortillas. Roll up, jellyroll fashion, pressing edges to seal: wrap in plastic wrap. Chill 4 to 6 hours. Cut into 1/飥?inch thick slices.





Yield: 6 dozen

take a prepared pizza dough, spread some shredded cheese *mexican blend without taco spices works well* then ranch dressing, cooked and diced chicken cooked and crumbled bacon more cheese and bake at 425F until cheese is melty and golden brown

INGREDIENTS


5 pounds peeled and cubed potatoes


1 (8 ounce) package cream cheese, softened


1 (1 ounce) package ranch dressing mix


4 tablespoons heavy cream (optional)


1 pinch salt








DIRECTIONS


Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain, and transfer to a large bowl.


Before mashing potatoes, add the cream cheese, salad dressing, cream and salt.


Beat with a mixer until smooth. Serve immediately.
Parmesan Ranch Chicken





Coat your chicken in the ranch dressing and roll in parmesan cheese and bread crumbs.





Bake in oven at 350 F until chicken is no longer pink or you can do in a sauce pan with a little bit of EVOO
I like to mix a packet of ranch dressing powder w/ 2 cups of flour and use it to flour a cut-up chicken before pan or oven frying it.
