Could any one tell me the best recipe for fried rice?

The best fried rice recipe I've used over the years has bacon and ham in it. Be sure and make your rice the day before so it's cold and clumped. Here's all the things I have in my fried rice:





2 slices bacon - sliced widthwise into small pieces


1/2 breakfast ham - cut into cubes


1/4 medium onion - diced


2 eggs - beaten


1 T butter


Ketjap Manis (it's a medium thick sweet soy sauce from Indonesia - Oriental stores carry it. If you don't have it, use regular soy sauce with some black pepper and a little sugar)


Cold rice





Melt the butter in a skillet. Add the egg - do not stir but lift the edges until the egg is cooked as one piece. Roll up and put on a plate. Set aside.





Add the bacon to the skillet and cook until the bacon releases some of it's fat. Then add the onion and cook until it's translucent. Add the ham and cook until it starts releasing it's water. Add the rice and mash with your spoon to break up the clumps. Stir everything together and cook until your rice has warmed up a little. Drizzle with the Ketjap or soy sauce mixture and stir. Keep adding the Ketjap or Soy sauce mixture until you have the color you want. Don't overdo the sauce. Once the rice is heated, take the egg and slice it into shreds. Place it in the skillet and gently stir it in. Serve with pickles - either sweet or sour. The pickles cut the coating on your mouth and makes the next bite after the pickle, taste as good as your first bite!

cold rice, garlic, ginger, sliced chicken breast, cubed capsicum and egg.





fry the garlic and ginger with some oil for 30 sec on medium fire put in chicken and a bit of salt and some pepper cook till chicken is done. crack the egg stir around then put in the rice and cubed capsicum. cook for another 3 minutes or so. slice some spring onions for decoration.Could any one tell me the best recipe for fried rice?
The one I use seems to be a hit with my family:I saute bell peppers and onions in oil til almost soft then I add cubed chicken breast and stir fry this adding a couple beaten eggs when the chicken is opaque then stir in the eggs off to one side or remove the chicken and add it before serving . Once the eggs are set cut in pieces in the vegetables to mix in add the chicken and soy sauce with a little jalapeno pepper juice then mix in your cooked rice and soy sauce to blend . Enjoy!
You will need a really big frypan or wok for this recipe.





Cook about three cups of rice, keep warm.


Cut 3 pork chops into cubes,fry until brown.


Dice one onion, add to browning pork.


Add 2 table spoons of garlic.


Add 2 cups carrots sliced into 1 inch long strips.


Cook until mixture is tender.


Push mixture to one side of the pan and add 2 beaten eggs to the empty side.


Cook eggs then stir with mixture.


Add rice.


stir together.


Add about 1 1/2 cups Oyster sauce.


Stir and fry for another five minutes.


Enjoy.
I do my fried rice a little different from everyone else.





If you have a rice cooker, wash 5 cups of rice and cook as usual. I rinse my rice before cooking to take off the extra starch.


In a skillet cook 2 packages of Lite sausage (don't forget to drain off the excess grease)


Grate 1-2 good sized carrots (depending on how much work you want to do, use a food processor, it's easier)


Chop 4-8 green onions


Beat 6-12 eggs and scramble


Drain 2 cans of water chestnuts





When the rice is finished, put it in a BIG pot, add your scrambled eggs, chopped onions, carrots, water chestnuts and sausage. Add a LITTLE sesame seed oil *a little goes a LONG way* and Lite Soy sauce. Mix well and Enjoy
