LINGUICA OMELET





Eggs


Cheese, shredded


Linquica, chopped fine


Onions, chopped fine


Bell Peppers, chopped fine


1 teaspoon butter


1 teaspoon vegetable or olive oil





Place butter and oil in skillet, add onion, pepper and linquica.


Saute over high heat for several minutes until lightly browned. Add cheese.





Beat eggs together lightly and pour over ingredients gathered together into center of skillet. Cut quickly in half and fold over.





Season with salt and pepper to taste and serve straoght away.





CHEDDAR OMELET





4 eggs, separated


3 tablespoons water


1/2 cup mayonnaise


2 tablespoons butter


1 cup cheddar cheese, shredded


salt and pepper to taste





Preheat oven to 350F degrees.


Beat egg whites only until soft peaks form. In a separate bowl, beat egg yolks, mayonnaise and water. Gently fold yolk mixture into whites.





In an oven-proof skillet, melt butter and pour in egg mixture.





Cook over low heat without stirring for 10 minutes or until egg mixture has become lightly browned on bottom but still remains moist on top.





Bake in preheated 350 degrees F. oven for 5 minutes. Sprinkle with cheese and bake 1 to 2 minutes more, or until cheese melts.





Remove from oven. Loosen edges from side of pan and make a shallow cut through the center so that omelet will fold more easily.





Fold omelet in half and serve.





Serves 4.





Variation: Stir chopped mushrooms and/or cooked ham into the egg mixture. Sprinkle with paprika or chives before serving.





ZUCCHINI PEPPERONI OMELET





FILLING:





1 clove garlic, minced


1 med. green pepper, seeded and chopped


1 sm. onion, chopped


3 tbsp. olive oil


2 med. zucchini, pared and sliced into 1/8 inch rounds


1/4 tsp. dried oregano


1 (16 oz.) can tomatoes, drained and chopped


6 oz. pepperoni, thinly sliced





OMELET INGREDIENTS:





3 eggs


1 tbsp. water


Pinch white pepper


1 tbsp. unsalted butter


1/2 c. zucchini pepperoni filling





In large skillet, saute garlic, green pepper and onion in olive oil until crisp- tender, 2 to 3 minutes. Add zucchini and oregano; saute until crisp tender, 1 to 2 minutes. Stir in tomatoes and pepperoni. Cook, stirring constantly, over medium heat until almost all liquid is evaporated, 3 to 4 minutes. Season to taste with salt and pepper.


For each omelet combine eggs, water and pepper in small bowl. Beat vigorously with fork about 30 seconds. Heat 8 inch omelet pan over medium high heat until hot. Add butter and swirl to coat bottom and sides of pan. When foam subsides, pour in eggs. As eggs begin to firm up tilt pan to spread liquid evenly over set eggs. Gently lift edges to allow liquid to run under eggs.





When eggs have completely set but are still moist, spoon 1/2 cup of filling down center of omelet. Fold top 1/3 of omelet over filling and complete folding while turning onto plate, seam side down. Serve immediately.

Mediterranean Omelet





3 eggs


2 oz. pesto (fresh basil, garlic, parm. cheese, and olive oil blended)


3-5 roasted red pepper strips (can do this on gas stove or buy in jars from grocer)


6-8 kalamato olives (I like to cut them in half, quarters if they are too large)


2-3 oz. of crumbled feta or goat cheese
Ingredients


Preparation time: 10 minutes


Cooking time: 10 minutes


Serves:1


2 medium free range eggs


2tsp iced water


1 slice lean smoked bacon (or thinly sliced lean ham)


1 medium tomato, sliced


1-2 mushrooms, finely sliced


seasoning


1tsp vegetable oil


You will need a 20cm omelette pan





Recipe


Method


Beat the eggs in a bowl with the iced water and season. Brush the omelette pan lightly with oil ensuring you cover to the rim and preheat the pan.


Meanwhile preheat the grill.


Once the pan is hot, pour in the egg mix and with a fork start to scramble the egg lightly. Turn down the heat and spread egg mix smoothly to form an omelette. The egg does not need to be cooked thoroughly at this stage.


Place the remaining ingredients on top of the egg mix and put under the hot grill until cooked. The omelette mix will puff up around the filling.


Remove from the grill and with a palette knife or an egg slice, loosen the edges, fold in half and serve immediately with a good dollop of brown sauce and fresh crusty bread
Get ya a big bowl and a fork.Grab about 3 or 4 eggs a hand full of canned mushrooms some cheese and meat of your choice.Crack the eggs in a bowl and give em a good stir,pour it in a greased skillet then throw the good stuff on top.Cook slow until its all firm and no runny stuff, and throw it on a plate.Dont forget the salt and pepper! You can play with it and add your own favs.OH ya might want to chop the goodies first:)
Use your basic omelette recipe and fill it with blueberry jam and cream cheese,sprinkle powdere sugar on top.

Start with a good basic omelette recipe and method....then the ingreds and combos are endless. Try this simple recipe:





For 1 omelette:


3 whole eggs, beaten with half %26amp; half, seasoned with salt and pepper.





Use a 10 inch heavy bottomed skillet for best results. Pre heat the broiler to 500掳F





Heat the pan over med high heat with a pat of butter. When the butter begins bubble, pour in the egg mixture. Let the mixture sit for a few secs to make a sort of ';egg pancake';. Using a rubber spatula, gently lifts the edges slightly away from the sides of the pan, and let the liquid eggs on the top run under the cooked eggs. Do this on all the way around until most of the liquid eggs are gone. Remove from heat, and place under your broiler for about a min. Remove from broiler, Now, you can add your ingredients. Add them to one side of the omelette. If you use any meats, or veggies such as spinach, onions, peppers, mushrooms, etc...cook them first. In a seperate saute pan, and add when the eggs come out of the broiler. Top your choice of ingreds with your choice of cheese, if any, and return to the broiler for another min. When cheese is melted, remove from broiler. Fold the side with the ingreds over to the middle of the omelette using your rubber spatula. With the open end ready to come out of the pan and onto your plate, place your rubber spatula over the folded part, and guide it to fold over the open end, as it falls on to your plate.

Onions, spinach, tomatoes, avocados, asparagus, arugula, bell peppers, mushrooms of any sort, sun dried tomatoes, grilled zucchini, etc





Cheeses:


Brie, Camembert, feta, cheddar, smoked gouda, gruyere, swiss, fresh mozzarella, provalone, etc.





The key is to be creative, and choose fillings that you like. Experiment....see what you come up with. Hope this helps.
