How to make chalupas or best chalupa recipe?

I want to make mexican chalupas. Have you ever made them and if so what recipe did you use and how did they turn out? Did you like them?How to make chalupas or best chalupa recipe?
CHICKEN CHALUPAS


# 4 corn tortillas, either white, yellow or red


# hot oil for frying tortillas


# 2 cups refried beans


* 2 chicken breast halves, boneless, skinless


* 1/4 olive oil


* 1 teaspoon Bolner’s Fiesta fajita seasoning


* 1 12 oz can Rotel� Tomatoes %26amp; Green Chilies, drained


* 1 cup sour cream


* 1 tablespoon fresh cilantro, chopped fine


* 4 oz. Monterey Jack cheese, grated fine


* 4 cups iceberg lettuce, shredded fine


* 1 cup guacamole (see recipe under Appetizers)


* paprika for garnish





Directions:


Sprinkle both sides of the chicken breasts with the fajita seasoning, then fry until


browned in the olive oil. Remove, let cool, and cut into 1/4” pieces.


Put in a large glass bowl.





Fry the corn tortillas in the hot oil, one at a time, until crisp.


Remove and let cool on a paper towel.





Add the ‘drained’ Rotel tomatoes and green chilies to the bowl of diced chicken.





Add the sour cream and cilantro. Stir to mix well.


Preheat the broiler. While waiting, spread a thin layer of warm beans (1/4” or less)


on each shell followed by a thin layer of the ‘chicken mix’. Next, add a thin layer


(approx. 1 oz) of the Monterey Jack cheese and put all 4 tortillas on a cookie sheet.


Put under the hot broiler for about 2 minutes until the cheese is hot and bubbly and


has slightly ‘browned’.





Remove from the broiler and take 1 cup of the thinly sliced iceberg lettuce and put


in your ‘cupped’ hand. Gently lay the lettuce on top of the melted cheese to form


sort of a small ‘mountain’. Do this on all the remaining ‘shells’.





With a spoon, take approximately 1/4 cup of the guacamole and gently form a ‘dollop’


at the top of the mountain. The guacamole can also be served as a compliment on the side.


Pico de gallo is also another great compliment that will give this dish even more ‘zip’.





Sprinkle a very light layer of paprika across the whole chalupa.


Very carefully, place one chalupa on a smaller plate if serving as an appetizer, or


two on a larger plate if serving as the main entree. A small portion of Ranch dressing


and Pace picante sauce should accompany the chicken chalupas for your guests to


compliment these light, but very filling creations.





The cold crispness of the lettuce and the warm cheese, chicken and beans is a very


surprising combination. Be sure to have a fork handy as these are eaten easiest by


cutting off a small piece at a time.

Ingredients:


2 C. cooked chicken


1 C. shredded Cheddar cheese


1 C. sour cream


1 bunch chopped green onions


1 can cream of chicken soup [undiluted]


1 can diced tomatoes with chili peppers [undrained]


1 small can of chopped black olives


Mozzarella cheese


1 pkg. of small (about 8';) flour tortillas


Preparation:


Combine all ingredients except tortillas and Mozzarella cheese.


Fill flour tortillas with mixture and place seam-side down on a greased baking dish. Cover with a cup of grated Mozzarella cheese. Bake at 350 degrees about 25 minutes. Provide salsa and garnishes

corn tortilla a must, if you can find the already crispy good if not you will have to fry them, until crispy..


Be sure and drain on fresh paper towels.


Re fried beans (use can) heat on low


now anything you can think of can go on top


Re fried beans on bottom


taco meat , chicken, seafood





cheese


melt under broiler


lettuce and tomatoes


add sour cream and hot sauce and enjoy


In Texas we eat them at ball games and my kids were making them when they were 7 or 8
Chalupas Compuestas





12 Tostadas; (fried tortillas)


4 c Refried beans; to 6 cups


1 c Cheddar cheese; shredded


2 c Chili con carne; NO BEANS


2 c Lettuce; shredded


Guacamole





Place tostadas on baking sheet; spread with refried beans and shredded


cheese. Place under broiler just until cheese melts. Remove from oven;


spread chili and shredded lettuce over tostadas and serve at once. Serve


with guacamole.
