What is the best brisket recipe?

The recipe I have says to pour gingerale over the brisket after cooking for 2-1/2 hours and before putting on a mustard/brown sugar glaze. What is the purpose of the gingerale? Can I leave it off? Is there a substitute? What is the best brisket recipe?
Place brisket in a large plastic bag. Add 1 beer, and 1 can of cola. Salt, Pepper and Garlic...to your taste. Refrigerate in refrigerator for for 3hrs., or overnight. Place on hot grill, or smoker until it's med. rare. Then baste with your favorite BBQ sauce until done! MMMMMMMMM

The Ginger Ale acts as a tenderizer, just like the beer and cola do! You could leave it out, but you might end up with it tough! Good Luck! What is the best brisket recipe?
