The best recipe for cucumber salad with tomato and onion ?

ive had this salad made up of thin sliced cucumber,diced tomato,and sliced white onion,with a marinade of like vinigar and sugar at a gathering once and i would like to get a recipe for this salad and whats its called. ive found some recipies that involved mayo but i dont want mayo in my recipe as this salad did not have any mayo in it. The best recipe for cucumber salad with tomato and onion ?
We're having cucs and tomatoes tomorrow with our dinner. And we like lots of onion in it. It's sorta like having a lightly pickled salad, so I guess you could call it pickled cucs and tomatoes if you want!





Our family has made this type salad since at least in the 1800s since I know my great grandmother made it when she was young!





Here's our recipe for it with lots of options available to you!





TOMATO AND CUCUMBER SALAD





Tomatoes, washed and sliced


Cucumbers, peeled, scored with fork tines, and sliced


Green, Red or White Onions, sliced


Fresh Parsley, chopped


Green Peppers, sliced or diced (optional)


Fresh Chives, chopped (optional)


Fresh Basil Leaves, chopped (optional)





Put all fresh veggies and herbs in a salad/serving bowl. Make sugar-vinegar-water solution, but make sure it is chilled. Pour over veggies at least 1/2 hour before serving and refrigerate.





Short-cut on making sugar-vinegar water:





Put 1/2 cup sugar and 1 cup cider vinegar in 2 cup Pyrex measuring pitcher and heat on High in microwave until sugar is dissolved. Add enough ice cubes to add about one cup additional liquid. When these melt, the solution will be ready to be put on the veggies.





Alternate: Use fresh zucchini instead of cucumber.

Ezme Salatasi (Turkish Tomato Salad)





2 large tomatoes (or 4 medium), chopped


1/2 large cucumber, peeled and diced


1/2 yellow pepper, seeded and chopped


1 small onion, diced


2 cloves garlic, minced


1/2 cup parsley, finely chopped


2 tablespoons lemon juice


1 tablespoon red wine vinegar


2 tablespoons Spicy V-8 (or tomato juice)


generous grating black pepper


1/2 teaspoon paprika


1/4 teaspoon cumin


salt to taste (optional)





Combine all ingredients and mix well. Serve immediately or chill for an hour. Try it in a pita with hummus or on top of a green salad.



My fave is thinly sliced cukes, plum tomatoes, green onions, mushrooms and green peppers. I make a marinade of tarragon vinegar, olive oil, fresh pepper and a dash of sugar. I mix the dressing, pour over veggies and toss it in fridge. Its like 1 tbl of herb vinegar, 1 tbl of oil, and 1/4 tsp of sugar for a quart? of veggies. After it marinates and I toss, I taste. If it's really good with spicy onions, I leave it alone. Otherwise, I might add fresh cracked pepper. Sometimes I add celery.





I'm sparse on dressings, because I think they ruin a salad. YMMV.
I have made my cucumber's with tomato's and onions before.








3 large greenhouse seedless cucumber (English)


1/2 Balsamic vinegar


1 1/2 teas salt


1 rounded tablespoon sugar


4 large tomatoes


1cup diced red onion


1/4 fresh mint


4 tablespoons olive oil


salt and pepper
